"open reception" means "strong feeling to drink coffee"?
I am not sure. And
I guess "comes" 's subject is "open reception",
What does "comes" mean?   って質問したんよ。
意味はわかるけど、open reception がちょっち馴染みがなかったけんのう。
ほんだら、こんな親切な返事が返ってきたんよ。
まるで、イルボンの受験塾の優秀な講師の説明みたいで、
面白かったというか、感心したというか。
主語を見つける方法については、まさにオレ流のまんま。
どげんもんたい。勉強になるやろ?

comes (is happening) amid ( in )
a proliferating (increasing) number of coffee chains.

So you could re-read the sentence like this:

Such widespread acceptance for fancy coffee - even thought it is getting more expensive - is happening in an increasing number of coffee shops.

A good way to find out the subject and verb of a sentence is to make the sentence as short as you can and still make sense to you - for me that would be:

Acceptance of expensive fancy coffee is happening in many coffee shops.

The verb is that action - acceptance
The subject is who is doing the action - in this sentence that is tricky - the consumers who buy and drink the coffee are the subject.

You could re-write the sentence like this :
Consumer acceptance of expensive fancy coffee is happening in many coffee shops.
